Black Bean and Corn Salsa Chicken - Crockpot Recipe

My co-worker Josh is snarky and sarcastic. Half the time we are arguing with each other. But once in a great while he'll come up with a good idea. This crockpot recipe just so happens to be one of them. I made it for supper last night and it was mighty delicious. This recipe also makes an abundance, so it's perfect for feeding a large family. So yeah, I gotta give props to Josh. Just hope it doesn't go to his head!

Black Bean and Corn Salsa Chicken

Ingredients:

2 jars chunky salsa
2 cans corn or one package frozen corn
2 cans black beans
4 boneless skinless chicken breasts

Directions:

Place all ingredients in crock pot and set on low for eight hours. Pretty simple!

This meal can be eaten alone with no additions or placed on a warm tortilla shell topped with shredded cheese and eaten like a burrito.

Yummy! We have a crock pot meal in right now. It's an Indian dish that we've never tried.
