The other day I came across a recipe at My Fridge Food for Best Garlic Mushrooms. They looked so yummy I made some up that night, with just a few minor tweaks.
16 open cup mushrooms, stalks cut level
3 tbsp. vegetable oil
1 tsp. garlic
1/2 tsp. garlic powder
2 tbsp. fresh thyme, chopped
3 tbsp. unsalted butter, softened
5 tbsp. fresh breadcrumps
1 tbsp. lemon juice
1/3 cup parmesan cheese
salt and pepper to taste
Preheat oven to 400F. Lightly fry the mushrooms, cap-side down, in hot vegetable oil for 2-3 minutes.
Arrange the mushrooms on a 9x13 cooking dish with the stalks facing upwards.
In a small bowl, mix together the softened butter, garlic, thyme, lemon juice and seasoning.
Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top.
Bake immediately in the oven for 15 minutes or golden around the mushroom cap.
Remove from oven and sprinkle with parmesan cheese.
