Homemade Zucchini Bread - Recipe

My mother is known for her baked goods, with zucchini bread being at the top of the list.  For example, she baked five loaves and brought them to a birthday party the other day.  Not a morsel remained.
 
She kindly agreed to share her recipe.

2 cups sugar
3 eggs
1 cup cooking oil
2 cups grated zucchini
3 cups flour
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/4 cup milk
2/3 cup chopped pecans (optional)
 
Pour mixture into bread loaf pans and bake at 325 degrees for one hour.

Yum! So, stupid question alert--this is a sweet dessert bread, right? I don't think "zucchini" when I think of dessert, but I noticed the 2 cups of sugar, vanilla, cinnamon, etc. Not that it matters; I'm going to try it regardless because it sounds interesting :) Thanks for sharing!

I love zucchini bread! I could live off zucchini and banana bread,they are both so delish.I'm glad your mom felt up to making 5 loaves of it.This is so nice of her to share her recipe.

One of my co workers used to bring zucchini bread in and I loved it! Haven't had any in ages. I think I need to remedy that asap!

I don't know who this Becky lady is but since she seems like such a delightful person and you seem sincerely sorry for having slighted her, I too believe that you should make this for her as well, you know, just to make sure the air is clear with her.

Tell your mom her bread rocks. My kids thought so, too, even though they were very suspicious and glared at me when I started grating up the zucchini, like, "What are you doing with THAT? Not putting it in the BREAD are you??!!! NOOOoooOOOoo!!!" It turned out delicious, and the recipe makes enough to share (2 loaves). I'm going to try it with yellow summer squash next time :) Thanks!

I have yet to try making zucchini bread nor have I ever tasted it. I really do need to give it a try sometime as it does look good.

Oh that looks so good! I have never tried to make it at home before, but we are growing Zucchini in our little garden this year! I have to pin and try it as soon as they are ready! :)
