I had a couple of cucumbers hanging out in my fridge and wasn't quite sure what to do with them. I ended up using a Cool Cucumber Salad recipe from McCormick and served it at a recent family gathering. Must say, I like the way it turned out.
Serves: Makes 6 (1/2-cup) servings.
2 cups thinly sliced cucumbers (4 small or 2 large cucumbers)
1/2 teaspoon salt
1 cup thinly sliced onion
1/4 cup vinegar
1/4 cup water
1 tablespoon sugar
1/2 teaspoon McCormick® Dill Weed
1/4 teaspoon McCormick® Black Pepper, Coarse Ground
1 pinch McCormick® Red Pepper, Ground
(*I admittedly did not use the Dill Weed or the Red Pepper, only because I didn't have it on hand at the time*)
Place cucumber slices in medium bowl. Sprinkle with salt. Stir in onions. Mix remaining ingredients in small bowl. Pour over cucumbers and onions; toss lightly. Cover. Refrigerate 1 hour or until ready to serve. Toss before serving.
