Cool Cucumber Salad - Recipe

I had a couple of cucumbers hanging out in my fridge and wasn't quite sure what to do with them.  I ended up using a Cool Cucumber Salad recipe from McCormick and served it at a recent family gathering.  Must say, I like the way it turned out.

Serves: Makes 6 (1/2-cup) servings.

Ingredients:
2 cups thinly sliced cucumbers (4 small or 2 large cucumbers)
1/2 teaspoon salt
1 cup thinly sliced onion
1/4 cup vinegar
1/4 cup water
1 tablespoon sugar
1/2 teaspoon McCormick® Dill Weed
1/4 teaspoon McCormick® Black Pepper, Coarse Ground
1 pinch McCormick® Red Pepper, Ground

(*I admittedly did not use the Dill Weed or the Red Pepper, only because I didn't have it on hand at the time*)

Directions:

Place cucumber slices in medium bowl. Sprinkle with salt. Stir in onions. Mix remaining ingredients in small bowl. Pour over cucumbers and onions; toss lightly. Cover. Refrigerate 1 hour or until ready to serve. Toss before serving.
What's your favorite way to eat or prepare cucumbers?

This looks perfect for this time of year. When I had a juicer, I put one cucumber in the juice each time I made it. It was good. It really didn't matter what kind of juice I made. It worked with anything.

( Cool Cucumber Salad Recipe} My mother use to make this all the time when I was younger. She also made one with mayo in it too.
