My son, Adam, found a recipe online for Lucky Charms Ice Cream Cake. Later that day, he was making it. Mind you, he thinks ice cream should be a part of every breakfast, lunch, and supper meal.

Lucky Charms Ice Cream Cake
1 1/2 cups white chocolate chips
1 1/2 oz. butter
Microwave for 30 seconds in a bowl. Lay mixture down on wax paper and spread evenly. Put 1 1/2 cups Lucky Charms on top of mixture. Freeze for 20 minutes.
2 cups mini marshmallows
.5 oz butter
Microwave for 30 seconds. Add 2.5 cups Lucky Charms and stir.
Evenly spread crust mixture in a 9" round pan.
To Build Cake:
Spread out 1/2 gallon vanilla ice cream evenly on top of crust mixture. To easier spread the ice cream out evenly in the pan, first soften ice cream in microwave for approximately 30 seconds. Retrieve topping mixture from freezer and shatter into small pieces. Lay topping over the ice cream.
Freeze entire ice cream cake for 20 minutes. Enjoy!
