It's National Garlic Day

Thai Ginger-Garlic Grilled Pork Chops with Kaffir Lime and Cucumber Relish

Garlic is one of the most widely used culinary ingredients across the globe.  Personally, I'm a big fan of the stuff.  Throw garlic on almost any dish and I'll eat it.

Garlic was once used to treat warts, acne, and even toothaches.

So, it might not make your breath smell so great, but garlic is still a potent aphrodisiac. It contains allicin, which is known to increase blood flow, which in turn leads to improved stamina and sexual energy. Its properties are most powerful when it is consumed raw, crushed or very finely chopped.

Garlic is a natural remedy due to its antibacterial properties. The strong-smelling bulb is known for being effective in tackling high blood pressure, cholesterol, cardiovascular disease and even the common cold.

No matter how you dish it up, celebrate by making a tasty meal with garlic.
Garlic Parmesan Mushrooms

In honor of today, here's a recipe I make from time to time, using garlic:

Garlic Parmesan Mushrooms

Ingredients:

16 open cup mushrooms, stalks cut level
3 tbsp. vegetable oil
1 tsp. garlic
1/2 tsp. garlic powder
2 tbsp. fresh thyme, chopped
3 tbsp. unsalted butter, softened
5 tbsp. fresh breadcrumps
1 tbsp. lemon juice
1/3 cup parmesan cheese
salt and pepper to taste

Directions:

Preheat oven to 400F.  Lightly fry the mushrooms, cap-side down, in hot vegetable oil for 2-3 minutes.

Arrange the mushrooms on a 9x13 cooking dish with the stalks facing upwards.

In a small bowl, mix together the softened butter, garlic, thyme, lemon juice and seasoning.

Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top.

Bake immediately in the oven for 15 minutes or golden around the mushroom cap.

Remove from oven and sprinkle with parmesan cheese.
