I never claimed to be a professional food blogger so pay no mind to the fair weather pictures. I came across a recipe for an easy no-bake eclair cake from Buns In My Oven (her pictures are way better). I made some for Thanksgiving and again for the church's Christmas party. Went over quite well!
the first layer
INGREDIENTS
1 package graham crackers
2 packages 3.4 oz instant French Vanilla pudding mix
8 ounces Cool Whip, thawed
3 cups milk
16 oz. chocolate frosting
INSTRUCTIONS
In a large bowl, mix together the pudding mix, Cool Whip and milk. Beat well.
Arrange graham crackers in a single layer on the bottom of a 9x13 baking dish.
Pour half of the pudding mixture over the graham crackers.
Add another layer of graham crackers and pour remaining pudding in top.
Add the final layer of graham crackers and spread with chocolate frosting.
Refrigerate for at least four hours before serving.
*Tip: Soften the frosting up a bit in the microwave to help it spread more easily.

I love this recipe. It will be perfect for my family they love custard type desserts and it is so easy to make.
This is a really nice idea!! And I can see why it is a "go to" recipe. I'm always looking for an easy crowd pleaser. I want to try it!
