Healthy Baking Challenge for National Nutrition Month - #sprinkleofnutrition Review and Giveaway

March is National Nutrition Month.  When it comes to baking, it’s hard not to think of all that sugar, flour, and butter; And I'll be the first to admit that I like all of those.  But, rather than always relying on those cooking ingredients, you can re-approach baking with recipes that are both nutritious and delicious.  

Since 2000, Carrington Farms has been making delicious, 100% organic, non-genetically modified health food products accessible to nutrition-conscious consumers. Their line of flax and coconut oil products serves a range of purposes, including baking.

I was challenged to create dishes using Carrington Farms food products.  I've used Liquid Coconut Cooking Oil before, but was new to using Coconut Oil Cooking Spray and Ready-to-Eat Flax Chia Blend.
I've been making up a few food dishes with Carrington Farm products, and baking goods on the T-fal AirBake Natural cookie sheets.  What I like about the cookie sheets is they are available in three sizes, and they are made of natural aluminum.  Depending on what I am baking, I can use either the small, medium, or large sheet.  T-fal AirBake is designed to block the direct oven heat while a layer of air acts as an insulator preventing the top sheet from overheating. This means better browning, no burning and moister baked goods
The basis of the recipe is nothing really new or original, but one dish that I made using Carrington Food products is Baked Chicken Breast.  I first dipped the chicken in egg, then transferred it to a bowl of the Organic Flax Chia Blend.  I then cooked the chicken on the T-fal AirBake Natural sheets at 400 degrees for 25 minutes.

Using the Organic Flax Chia Blend was a whole new take on chicken.  It created a coating that was both crunchy and flavorful.  The Flax Chia Blend is an excellent source of energy and nutrients.  Using  it as coating for my meats is healthier option than other methods I've used.
 
For preparation for the chicken dish, and others I've made, I've been using the Carrington Farms Coconut Oil Cooking Spray.  It keeps food from sticking from bakeware.  Made from Non-GMO coconuts, it's ideal for cooking, baking, and sautéing.
 
 

I'm a big fan of the Liquid Coconut Cooking Oil.  It's a healthier alternative to butter and some other oils.  Available in four flavors, I've been using the Flavorless and Odorless alternative.  My husband is not a fan of coconut at all so it took him some time to get used to the Coconut Cooking Oil.  Once he realized that there was no smell and only a very subtle taste of coconut, he now likes it and doesn't mind that I cook with it.

I doubt that I entirely switch my food base to all organic products.  I'm guilty of not always reading food labels.  I will say, though, that I enjoyed the Healthy Baking Challenge and will be using Carrington Foods and T-fal in future food preparation.
